Summer’s Best Guilt-Free Mint Chocolate Chip Popsicles

Two words…mint chocolate. Now you know the key to my heart. Give me chocolate and I’ll be your friend….give me MINT chocolate and I’ll be your best friend! But really.

I love a good mint chocolate dessert, especially when it has to do with something cold in the summer. (Yummy!) It’s already blazing hot here in Arkansas. It’s almost too hot to do anything outside for too long. So I’ve spent some time inside in the kitchen whipping up something special, I bring you my summer guilt-free mint chocolate chip popsicles. That’s right, guilt free…well for the most part. (wink wink!)

These bad boys are made of greek yogurt, pure vanilla, a little mint extract, and a dash of sugar. Not to mention they are incredibly easy to make!

Popsicles must be the going thing this summer because I visited about five different stores before finding popsicle molds. Like…what?! After scouring the town, I finally found these adorable Koji Ice Pop Molds at Target.

Let’s be honest, I don’t eat enough fruits and veggies in a day, but who truthfully does? Instead, I grab for the nearest quick and easy snack to satisfy my sweet tooth or belly grumble. That was until I tired this Shakeology thing for myself. Like a lot of people, I was pretty skeptical – how can this one shake a day be so vital to my daily nutrition? Well it can and it is!

I’ve tried workout after workout, after nutrition program trying to find something that sticks and it was just too hard for me to maintain. I can partly blame that on cravings and hunger pains I felt every day while on those fitness/nutrition programs. There was no way I could keep that going and make it my lifestyle. This girl has GOT to eat.

A Little Burger With My Guac

I am a list maker and a goal setter. Like hardcore. I made a goal this month that I was going to learn how to cook 5 new healthy recipes. 5! If you’ve had my cooking, you know that this is a true challenge. I am not the best cook in the book and my poor poor fiance would agree. BUT I’m making progress (with the help of Pinterest of course).

On this journey to find new healthy recipes to try for myself, I ran across one that absolutely caught my eye. May I present to you, Guacamole Turkey Burgers! This recipe was so stinkin’ easy, even I couldn’t mess it up! Not to mention it was oh so healthy and delicious. And it gets better – this recipe is 21 Day Fix approved. Um, yes please!

Summer Peach Tea

Happy first week of summer!!

We have been spending all of our free time outside enjoying the sun and the lake! Our tans are coming along great and we are more energized than ever to get out and explore. After a long day outside, nothing beats a cold glass of tea. Let me let you in on a little secret. Sweet tea is my weakness…like bad. I claim my Memaw makes the best sweet tea in all of the South, but I will drink any glass of tea that is in front of me. One of my all time favorite tea flavors is Peach. There’s something about the crispness that screams summertime! This is how I make it – so simple.

Summer Peach Tea

3 -4 tea bags

4-6 cups of water

1-2 cups of sugar (optional)

2-3 sliced peaches

Step 1: Bring the water to a boil and put the tea bags in; let steep for 3-5 minutes

Step 2: Remove from heat and let cool

Step 3: Put tea in your favorite pitcher and add sliced peaches, sugar (optional) and give it a good stir

Step 4: Add sugar to taste

It’s that simple! Enjoy!

 

Fall in Full Bloom

What’s not to love about Fall? The weather, the bold colors and best of all, the food!

Growing up I remember going to my Memaw’s house to pick the apples from her 15 apple trees that perfectly lined her front yard. Pawpaw would bring out the tractor and my cousins and I would climb in the bucket to be raised up in reach of the highest apple. Memaw would cut the apples into slices. Some would be dried on the front porch and the rest would be frozen to enjoy throughout the year.

This year, just like in years past, I have tried to incorporate apples into everything; Recipes, decorating…the list goes on.  They are just so beautiful and delicious.

In my journey to become “better in the kitchen”, I found a Bloomin’ Baked Apple recipe on Pinterest and had to test it out. I went to my local Walmart to buy the freshest apples and ingredients to make this yummy treat. Continue reading Fall in Full Bloom

Meal Planning is HARD.

So in an effort to eat clean and save a few extra bucks throughout the week, I have made the choice to begin meal planning. What I didn’t realize was that it is time consuming and really hard to stick to when the coworkers ask you to go to lunch and the roommates are constantly cooking yummy food…that you can’t have!

 

So here are some tips on meal planning to help keep my mind focused and my tummy happy!

1. Search for recipes

Searching for recipes can be very time consuming. Set aside at least 30 minutes a week to find new recipes to cook for the week. This also helps when creating a shopping list.

2. Start a calendar

Having a calendar to follow throughout the week will help keep you on track. When I have each meal planned and put into a calendar it saves me time trying to think about what to cook and eliminates the chance of choosing something unhealthy.

3. Make a shopping list

Making a shopping list is crucial to meal planning. Start making your shopping list when choosing recipes for the week. This will help you stay focused when in the grocery store so that you do not buy items that are not needed and unhealthy.

4. Plan for leftovers

Leftovers are a great way save a little extra money and provide a few extra snacks when you get hungry.
