Summer’s Best Guilt-Free Mint Chocolate Chip Popsicles

Two words…mint chocolate. Now you know the key to my heart. Give me chocolate and I’ll be your friend….give me MINT chocolate and I’ll be your best friend! But really.

I love a good mint chocolate dessert, especially when it has to do with something cold in the summer. (Yummy!) It’s already blazing hot here in Arkansas. It’s almost too hot to do anything outside for too long. So I’ve spent some time inside in the kitchen whipping up something special, I bring you my summer guilt-free mint chocolate chip popsicles. That’s right, guilt free…well for the most part. (wink wink!)

These bad boys are made of greek yogurt, pure vanilla, a little mint extract, and a dash of sugar. Not to mention they are incredibly easy to make!

Popsicles must be the going thing this summer because I visited about five different stores before finding popsicle molds. Like…what?! After scouring the town, I finally found these adorable Koji Ice Pop Molds at Target.

So, now that I have you drooling, let’s make some popsicles together!

Gather your ingredients:

  • Non-Fat Vanilla Greek Yogurt
  • Milk
  • Sugar
  • Pure Vanilla Extract
  • Mint Extract
  • Mini Chocolate Chips
  • Chocolate Magic Shell

Supplies:

  • Popsicle Molds
  • Popsicle Sticks
  • Green Food Coloring (optional)

Whisk together vanilla greek yogurt, milk, sugar, vanilla extract and mint extract together in a medium bowl. Add food color to get a mint green color.

**Taste test the mixture once all of the ingredients are in. If the mint is too strong add a little more sugar to balance it out.

Pour mixture into popsicle molds.

Drop in the mini chocolate chips so that they settle at the bottom, giving the popsicles a yummy chocolatey first bite!

Insert the popsicle sticks and put into the freezer for 6-8 hours. Once frozen, pull them out of the freezer and run each of the molds under warm water for about 60 seconds or until the popsicles slide out of the molds easily.

Now the fun part!! Drizzle the magic shell on top and add extra chocolate chips to the outside. Let harden, then serve!

Instructions
  1. In a medium bowl, whisk together non-fat vanilla greek yogurt, milk, pure vanilla extract, mint extract and sugar.
  2. Once ingredients are mixed well, add a few drops of green food coloring to get the desired green color you want.
  3. Carefully pour mixture into each popsicle mold, careful not to fill to the brim.
  4. Once the molds are filled, add the mini chocolate chips. These will fall to the very bottom giving the popsicles a yummy chocolatey first bite.
  5. Insert the popsicle sticks so that there is plenty of room left out to hold once they are frozen.
  6. Carefully place into the freezer and let them freeze for 6-8 hours or until frozen solid.
  7. Once the popsicles are frozen, pull them out of the freezer and run each one under warm water for about 60 seconds or until popsicle is easily pulled out of the mold.
  8. Now that they are out of the molds, drizzle the chocolate magic shell on top and add extra chocolate chips to your liking. Let the magic shell harden, then serve.
