Summer’s Best Guilt-Free Mint Chocolate Chip Popsicles

Two words…mint chocolate. Now you know the key to my heart. Give me chocolate and I’ll be your friend….give me MINT chocolate and I’ll be your best friend! But really.

I love a good mint chocolate dessert, especially when it has to do with something cold in the summer. (Yummy!) It’s already blazing hot here in Arkansas. It’s almost too hot to do anything outside for too long. So I’ve spent some time inside in the kitchen whipping up something special, I bring you my summer guilt-free mint chocolate chip popsicles. That’s right, guilt free…well for the most part. (wink wink!)


These bad boys are made of greek yogurt, pure vanilla, a little mint extract, and a dash of sugar. Not to mention they are incredibly easy to make!

Popsicles must be the going thing this summer because I visited about five different stores before finding popsicle molds. Like…what?! After scouring the town, I finally found these adorable Koji Ice Pop Molds at Target.

Mini Chili Bowl Dip

Tis’ the season for holiday parties and family gatherings! Every year for Christmas, we are on the road traveling from one side of the state to the other and boy does that get exhausting! Now, the entertainer inside of me LOVES to have really fresh wholesome snacks for our parties, but there’s just no easy way to to keep those fresh veggies and ingredients good while on a road trip.

Luckily I found one of my favorite holiday must-haves in my Walmart’s fresh veggie section that was pre-made and ready to eat  – guacamole! (talk about lifesaver)  GOODFOODS makes this amazing Tableside Guacamole that is seriously delicious and it’s easy to grab before our holiday parties! Who doesn’t love guacamole, right?! GOODFOODS has created a whole line of guacamole that is always fresh and never heated, made up of real ingredients – just the good stuff.  🙂 Some of my favorites are the Chunky Guacamole, Spicy Tamatillo, and Pineapple Pablano.  You can find even more flavors here.

Today, I am going to #ShareTheGoodness and show you how we used GOODFOODS Chucky Guacamole on our holiday spread for the non-traditional snack, Mini Chili Bowl Dip.

Mini anything is my favorite, but with this cold weather, nothing beats a warm bowl of chili topped with a dollop of fresh guacamole! Let me introduce you to my Mini Chili Bowl Dip with GOODFOODS guacamole, served with black bean and blue corn chips. This makes the perfect little appetizer or midnight snack for those waiting for Santa to arrive!

Using your family’s secret chili recipe or even canned chili (I know, crazy right? That stuff can be good!) make up a pot full. Pull out some small bowls and layer in your favorite ingredients. Some of my picks are refried beans, corn, and ground turkey. Top it with GOODFOODS guacamole and serve! Yummy!

Lessons on Making Pumpkin Pie

Pumpkin Pie

My family is full of great cooks and lucky for me, I married into a family of great cooks. But, somehow I was deprived of that gene and….it sucks. I always shied away from the kitchen during the holidays or family gatherings and found myself in front of the TV with the guys. My mother told me when I was a teenager and even during my college years that I’d better find a man that can cook, or I might just starve. Ok, I wouldn’t starve…I could make mac & cheese. (Geezz!)

This year is going to be different. This year I am going to put on my big girl apron and get my hands dirty in the kitchen. But, not without a little bit of practice. 🙂 This weekend I decided to try my hand at one of my all time favorite fall desserts, pumpkin pie.

Oh the chocolate cravings – give me a break. I went on a search to make the most healthy chocolate dessert to curb those pesky chocolate cravings and I found it. May I introduce to you to the Healthy Cocoa-Banana Oat Brownies. Yep, brownies.

Have you ever found a yummy recipe and then just had to have it right then?! That happens to me all the time. I find a recipe that I just have to have right now, but I don’t have the ingredients to make it….so off to the store I go and most of the time I end up making the recipe days or even weeks later because I spent all my time gathering what I needed. Blah.

These cocoa banana oat brownies are so easy to make and I betcha you have most, if not all of the ingredients in your kitchen right now! Better yet, these babies take less than 5 minutes to whip together and just a short 20 minutes to bake. Let me show you!

Well…yea that doesn’t happen very often. I am a list maker and a goal setter. Like hardcore. I made a goal this month that I was going to learn how to cook 5 new healthy recipes. 5! If you’ve had my cooking, you know that this is a true challenge. I am not the best cook in the book and my poor poor fiance would agree. BUT I’m making progress (with the help of Pinterest of course).

On this journey to find new healthy recipes to try for myself, I ran across one that absolutely caught my eye. May I present to you, Guacamole Turkey Burgers! This recipe was so stinkin’ easy, even I couldn’t mess it up! Not to mention it was oh so healthy and delicious. And it gets better – this recipe is 21 Day Fix approved. Um, yes please!

Fall in Full Bloom

What’s not to love about Fall? The weather, the bold colors and best of all, the food!

Growing up I remember going to my Memaw’s house to pick the apples from her 15 apple trees that perfectly lined her front yard. Pawpaw would bring out the tractor and my cousins and I would climb in the bucket to be raised up in reach of the highest apple. Memaw would cut the apples into slices. Some would be dried on the front porch and the rest would be frozen to enjoy throughout the year.

This year, just like in years past, I have tried to incorporate apples into everything; Recipes, decorating…the list goes on.  They are just so beautiful and delicious.

In my journey to become “better in the kitchen”, I found a Bloomin’ Baked Apple recipe on Pinterest and had to test it out. I went to my local Walmart to buy the freshest apples and ingredients to make this yummy treat. Continue reading Fall in Full Bloom
